A cast-iron pan deglazing on the stove, steam rising

The difference

Every step explained. Not just what to do, but why you're doing it.

DreamFond isn't a recipe collection. It's how you master technique. Understand the reason behind each move and you stop copying recipes and start cooking.

Step 3

Sear the meat, don't crowd the pan.

The why

A hot, uncrowded pan lets the surface dry and brown, so the Maillard reaction builds hundreds of savory compounds. Crowd it and the meat steams grey instead of searing deep and sweet.

Editorial · the origin

Born from the Blind Bolognese.

A chef who couldn't taste a thing, steering purely by smell, sound, and instinct to make a kid's birthday ragù. DreamFond was built to capture that soulful, sensory approach to cooking. It's for those who cook with their senses, not just their measuring cups.
